Air Cooled or
Water Cooled?
The most often question that I receive is what is the
difference between an Air cooled machine and a Water cooled machine.
First off, a batch freezer (or any other refrigeration device) has
what is called a condensing unit. The Condensing unit is the engine
of the batch freezer. This is the unit that "compresses" the
environmentally friendly Freon gas into a cold liquid which is then
sent up to the freezing cylinder to make it cold enough to make ice
cream, gelato or ices.
This condensing unit needs to be cooled just like your car engine.
Your car is both water cooled and air
cooled. You have a radiator that is cooling a liquid within the
radiator and the engine block. Your home refrigerator or your air
conditioner are examples of air cooled equipment.
Instead of blowing air across the condensing unit, we can
circulate tap water around the compressor and then throw the water
away. This is called a water cooled system. Sounds wasteful....but
it's not. Our Emery Thompson Batch Freezers are designed to use the
smallest amount of water possible to do the job. Water is only being
uses when the condensing unit is turned on. When off, the water
supply automatically shuts off. Our system even measures the
temperature of your water coming into the machine and adjusts the
usage accordingly. That's why an Emery Thompson can run in
Antarctica just as well as it can at the Equator. The machine does
the thinking for you!
I know you'll say 'but it's using precious water and especially my
water, is expensive!" True. But an air cooled machine is blowing hot
air into your ice cream room making it quite uncomfortable. So what
do you do?...turn on the air conditioning! Air conditioning runs on
electricity and for the most part electricity is made by burning
fossil fuel. If water is available, buy water cooled. If you are in
the Mohave Desert and water is scarce....buy air cooled.
Lastly, we have designed our machinery so that the air cooled and
the water cooled units have the exact same efficiency. Both are
going to make ice cream in the shortest possible time no matter what
the environmental conditions.
Our counter top CB-350 comes air cooled only while our larger
machines are available in air cooled or water cooled.
