A very long time
ago….1905 to be exact, Emery Thompson was awarded the world’s first
patent on a mechanized batch freezer. It was a vertical batch
freezer and it was “state of the art” in it’s time……for that matter
so was the Ford Model “T” motor car. Thankfully, batch freezers have
come a long way since then….well, most of them.
In 1919 Emery
Thompson was granted a second patent for a horizontal batch freezer.
This was (and still is today) a huge leap forward in ice cream
making technology. Gone were all the problems associated with a
vertical freezing chamber:
- Impossible
to clean and sanitize. A vertical batch freezer has to be
filled to the very top of the freezing chamber in order for all
the contact surfaces to be cleaned and sanitized. Even then, the
operator has to use extra care to see to it that the top cover
also comes in contact with the cleaning and sanitizing agents.
This wastes a lot of time and WATER ! Not exactly an
“environmentally friendly” process.
- Newton’s
Law of Universal Gravitation. Otherwise known as “what goes
up, must come down.” This holds true for nuts, cookies,
chocolate chips and fruits. In a vertical batch freezer,
according to Newton and Emery Thompson, all good things fall to
the bottom of the freezing cylinder. In other words, the cookies
that you add at the top of the cylinder are destined to end up
in a concentrated mass at the bottom of the cylinder. Not so
with a horizontal batch freezer. The specially designed beater
(dasher) and scraper blades assure that your ingredients are
evenly mixed throughout the batch of ice cream, Gelato, Sorbet
or Italian Ice.
- Wear and
Tear. In a horizontal Emery Thompson Batch Freezer, the
static pressure (the load on the cylinder and dasher) is evenly
distributed over the entire surface of the freezing chamber.
That’s a good thing! In a vertical batch freezer the downward
pressure of the mix and the ingredients is all to the bottom of
the freezing cylinder. That’s a lot of weight to put on the
drive system. This type of design will prematurely wear out the
drive components!

made in Italy. Emery Thompson Batch Freezers are Made In The
U.S.A. and so are all our parts. You shouldn’t need
any parts for the first ten years, but it’s reassuring to know
that any part can be delivered to you by 8:30 the next
morning. And, you won’t be paying import duties or the 49%
penalty for buying a machine based on the Euro instead of the
Dollar!
