BATCH FREEZERS
allow the user to literally dial in the overrun you want in your
finished product. Other rheostat controls only reduce the RPM’s of the
motor and cause premature failure of a very expensive motor. Our IOC
units not only allow you to vary the speed of the drive, they do not
lose torque across the speed range of the motor. That means a five
horsepower motor remains a five horsepower motor no matter what RPM you
spin it at! It also allows us to use standard American made motors,
which are available anywhere in the world.

batch freezer, you can have any air content you desire. Produce very low
overrun Frozen Custard. Slightly up the overrun and make Ultra-Premium
Tm.
Hard
Ice Cream and Gelato. A push of the IOC button and you’re making
Traditional Old Fashioned American Ice Cream. Run the machine on high
and now you are producing Italian Ice, Sorbet, Sorbetto and Sherbet.
Only on an Emery Thompson do you have refrigeration at any
speed! And you can discharge your finished product in 25 seconds!
That means your first pints will weigh the same as your last pints.
